What to eat today

I always feel bad for posting after breakfast time, but this could always be ideas that you use tomorrow instead of today…I’m still getting used to blogging!

Breakfast:

1 slice wheat 45 calorie bread and peanut butter (pre-workout)

2 hard boiled eggs

Fruit smoothie – frozen strawberries, blueberries, and spinach with almond milk.

Lunch:

Turkey sandwich on wheat bread (only used pesto and mustard for sauce)

Side salad

Dinner:

This is my version of a garlic-herb chicken and vegetable dinner. So yummy!

Garlic-herb chicken and vegetables:

  • 2 or 3 chicken breasts (this was made for 2 people, but my boyfriend can eat a lot)
  • 10 small red potatoes sliced
  • half of white onion sliced
  • bag of baby carrots
  • one bottle of Garlic-herb seasoning (Lite Italian dressing works well too)

Throw the carrots and potatoes at the bottom of the crockpot so that they cook all the way through. Put the chicken on top with the onion and cover the entire thing with the bottle of seasoning or dressing. I also added in about 3 cups of water and some garlic seasoning.

I love crockpot dinners because they are so easy to make and are ready whenever you get home!
